The Good cookBook diet
Genesis is a small eatery in the financial district that aims to turn corporate high-fliers to the road of clean eating.

EVER thought about eating the way the Bible tells you to? It's hard to imagine finding a cookbook in the book of God, but it's there in the book of Genesis, and that is precisely what Genesis the restaurant is all about.
Started by three Seventh Day Adventists and their close friends, Genesis is a small eatery in the financial district that aims to turn corporate high-fliers to the road of clean eating.
Says Chee Poh Geok, a former nurse who co-owns the vegetarian eatery along with retired teacher Esther Choo and dietitian Diana David: 'We've always believed that Man has several components - physical, mental, spiritual and emotional. The physical component will affect the other aspects of yourself - whatever you do physically will affect you emotionally and spiritually. That's why we believe that you need to take care of the physical component.'
As she explains it, the diet that God planned for Man is simple. 'He said plant food should be your food - berries, grains, seeds, nuts, fruits and vegetables would nourish us. We are only now beginning to find out how good this diet is for us, but to think it was written 6,000 years ago.
'After the Flood, there was no plant food and Man began to eat animals as well. But there were stipulations from God like not to take the fat or the blood. We now know that the fat is where the cholesterol is and the blood is where the disease is.'
Plants, Mrs Chee adds, are rich in phytochemicals that act as protection against cancer and other diseases.
'Here, we serve only natural plant food, not mock items, but if we do, we only select those that are closest to the natural products. There's more natural fibre because we use beans; there is no cholesterol; (our food) reduces fat and increases fibre, vitamin and mineral content.' All of which is a lot better than refined food.
And the response seems to be good, as Genesis has a strong loyal following who also bring their own friends to try the food.
'Our bestsellers are the 'chicken' rice and the Japanese rice sets,' she adds. 'Most people like the set rice dishes - we always balance it with greens, protein and whole grains. We use brown rice, soya for protein. Sometimes we use nuts or beans, which is also a source of protein. The chicken is made from tofu, and it goes with a garlic chilli sauce made with red peppers and lime juice.
'The Japanese rice set is brown rice with sticky rice inside, seasoned with a lot of seaweed and garnished with cucumber and fruit like mango and kiwi - it's a very tasty, fragrant and complete meal.'
There are also interesting sides like their own dumplings, while Western entrees include stuffed potatoes 'with our own mayonnaise made with soya'. The ladies also make their own soya spread and cashew butter - in fact, 'we make everything ourselves,' says Mrs Chee. But they're not in this for money, that's for sure. 'We were not thinking about profits when we started this, but about doing something for the community. We had been doing volunteer work before teaching people to cook, so when we started this, it was not about making profits. But there is the need to break even so we can continue to do it.'
Their goal, she says, is to help people make the switch from a high-fat diet to one that is the opposite. 'If they can do that, it will take care of a lot of the major diseases killing Singaporeans, like heart disease. Even if they want to eat their meat, they can at least make some effort to stay off that stuff some days of the week.'
The result of their efforts is that people have been swayed by their philosophy towards food, such that some of them even eat at Genesis every day. Despite not having done any publicity, the restaurant has a strong following thanks to its regulars who bring their friends and families along. 'They do our promotion for us,' says Mrs Chee. Or, if you want to put it in a biblical sense, you could say they're spreading the good word around.
